I’ve followed your guide and done sourdough many times but for some reason my doughn never looks as firm and easy to work with as yours does to the extent that if I try to score it with a lame, it just doesn’t slice through without spoiling the dough. I’ve tried a few different types of flours too. Any tips or advice? Thanks!
I am no sourdough expert, but have you tried putting your dough in the fridge overnight? I found after doing that my dough was much easier to score. When I first started making sourdough, I also felt my dough was too wet so I lowered the hydration level a bit and I felt that it did help. Hope that helps 🙂

myself as well as my 2 nieces ( 12 and 14 ) make it every week w/out fail!! Its the easiest thing ever!! It looks complicating but as you learn to make it ,it becomes routine and its actually fun!!

but I’m missing the piece about Dutch ovens
i don’t know what it is, how to use…..
can you add one more series to explain that?
It Dutch oven conducts heat better and will evenly spread it throughout… that’s why you use it for sour dough so your bread will rise evenly throughout
more the that ,the dutch oven pots get extremely hot witch is exactly what you need otherwise your sourdough wont come out.

A 5 qt pot would be perfect.
any size works, just make sure your sourdough isn’t bigger then the pot…
