We put kabocha squash in the cholent, with the peel! The peel is thin and edible, and when you put a chunk in on top of the cholent, it adds incredible flavor and is smooth and creamy and delicious. It’s superior to butternut squash in cholent. I’ve seen it sold in Gourmet Glatt in Lakewood.
