1. Smoky Black Bean Stew with Sweet Potatoes and Minted Yogurt Dressing by Theo Michaels

This deliciously easy black bean stew is complemented by roasted sweet potato and a cooling yogurt and mint dressing. You can cook this either on the stovetop or in a hot oven, covered, for 30 minutes. It’s a very versatile recipe so feel free to swap sweet potatoes for any squash or root vegetable and use a vegetable stock cube for extra depth.

The first time I made beef and barley soup it was a disaster. The meat was way too tough, and the barley wasn’t cooked properly. But I’m not one to give up, and I kept making it again and again until I perfected the recipe. Today it is my most-requested soup for supper. My kids love it, especially when I serve it with my homemade artisan bread (the one posted in the October 26 issue of Taste)!

Am I the only one the feels my kids are more likely to taste different foods if it’s in someones else’s home? Recently, we went to eat by a friend’s house who served a delicious vegetable soup. I told her that my kids don’t really like vegetable soups, but I will offer it to them anyways. I was shocked when my kids ate their entire bowls—and complimented the hostess as well! I knew it was time to go home and quickly make a soup to see if I could achieve the same results. I decided to make a thicker stew that I can serve as a complete meal in one bowl. When my children came home from school, I served them this bowl of stew. At first, we had some grumbling, but when I reminded them how much they liked the other soup, they agreed to give it a try. Next thing I knew, I had four empty bowls. This stew is full of healthy lentils, chickpeas, and vegetables, and I added in some meat so you can really call this a complete meal. Don’t be fooled by the lengthy ingredient list, this soup is really easy to throw together. Serve it with some crusty garlic bread for an added treat.

5. Lentils, Beans, and Tomato Stew by Kelly Cohen

As a kid, I didn’t grow up eating beans and lentils. It wasn’t part of our diet at all. I started eating them in NYC a few years back and started cooking them very recently. I find legumes very satisfying and filling. As a vegetarian, I am often missing my protein and this stew, believe it or not, offers 40 of protein per portion! This is a very easy recipe as all you need to do is throw in the ingredients. The more it cooks, the tastier it gets. To add some flavors to the beans and lentils, they are mixed with some of my favorite spices, paprika and cumin, and also tomatoes and mushrooms. How delicious is that??

6. Lemony Chickpea Tahini Stew by Sara and Yossi Goldstein

If vegetarian cuisine isn’t really your thing, there’s a big chance you’ll fall in love with this stew. It’s hearty and filling while being packed with warm spice and nutty tahini flavor. The lemon brings it all together while adding a bright citrus punch to the dish, so please don’t leave that out!

My mother-in-law, aka Ma Greenwald, introduced me to this soup, so when asked if I had a soup in mind for this collaboration I was excited to get this recipe the proper fame it deserves!

This thick, wholesome soup is perfect for winter, but can definitely be made all year long.

9. Fabulous Vegetable Bean Soup by Brynie Greisman

Chock-full of fresh veggies and a fabulous assortment of beans and grains, this is a real stick-to-your-ribs soup, but not overly thick. Feel free to personalize it by changing up the veggies and/or the grains. You can use fresh parsley or dill instead of frozen cubes, and you can swap split peas for the green lentils or use orange lentils instead of green. You get the idea! The great northern white beans have a firm texture and a really great nutty flavor that pairs really well with the hearty smoked turkey and beef fry flavors. This soup is all you could wish for on a blustery cold winter’s day!
