Ingredients

Salad

  • sliced London broil (recipe follows)

  • 1 sweet potato, roasted (recipe follows)

  • diced red onion

  • fresh spinach

Dressing

  • 1/4 cup olive oil

  • salt, to taste

  • pepper, to taste

  • 1/2 teaspoon garlic powder

  • 2 teaspoons brown sugar

  • 1/4 cup red wine vinegar

London Broil

  • 2-pound London broil

  • 5 sprigs fresh rosemary or 1/2 tablespoon dried rosemary

  • 3 tablespoons olive oil

  • 3 tablespoons Gefen Soy Sauce

Directions

Prepare the London Broil

1.

Combine the marinade ingredients in a ziptop bag, then add the London broil. Allow to marinate for at least one hour or overnight.

2.

Broil for 10 minutes per side or until desired degree of doneness.

Prepare the Roasted Sweet Potato

1.

Cut one sweet potato into small pieces. Add olive oil, salt, and pepper. Roast on 400 degrees Fahrenheit for 20 minutes.

To Serve

1.

Shake the dressing ingredients to mix.

2.

Combine spinach, onion, sweet potato, London broil, and dried cranberries or oranges in a large bowl. Add dressing just before serving. Sprinkle slivered almonds on top.
