A full, hearty, and delicious salad with strips of moist and heavenly London broil, roasted sweet potatoes, fresh spinach, red onion, and sweet morsels of fruit.

sliced London broil (recipe follows)
1 sweet potato, roasted (recipe follows)
diced red onion
fresh spinach
Gefen Sweetened Dried Cranberries or mandarin oranges
slivered almonds
1/4 cup olive oil
salt, to taste
pepper, to taste
1/2 teaspoon garlic powder
2 teaspoons brown sugar
1/4 cup red wine vinegar
2-pound London broil
5 sprigs fresh rosemary or 1/2 tablespoon dried rosemary
3 tablespoons olive oil
3 tablespoons Gefen Soy Sauce
2 tablespoons honey
2 cubes Gefen Frozen Garlic
Combine the marinade ingredients in a ziptop bag, then add the London broil. Allow to marinate for at least one hour or overnight.
Broil for 10 minutes per side or until desired degree of doneness.
Cut one sweet potato into small pieces. Add olive oil, salt, and pepper. Roast on 400 degrees Fahrenheit for 20 minutes.
Shake the dressing ingredients to mix.
Combine spinach, onion, sweet potato, London broil, and dried cranberries or oranges in a large bowl. Add dressing just before serving. Sprinkle slivered almonds on top.
