Here is a tried-and-true recipe for oatmeal cookies that you and your kids will love without having to think about the sugar and additives that regular cookies have. You can get creative with these, adding dried fruit, nuts, or other fillings. And they freeze beautifully, so you can always have them on hand for a quick breakfast or a snack whenever you need. Yield: approximately 18
2 large ripe bananas
1 and 3/4 cups oats
1/4 cup Gefen Almond Butter
1 teaspoon Gefen Vanilla Extract
1/2 teaspoon kosher salt
Glicks Chocolate Chips (or sugar-free chocolate chips if desired)
Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with Gefen Parchment Paper.
Mash bananas until creamy and smooth. Add remaining ingredients and mix well by hand.
Scoop balls of dough. Flatten and place on baking sheet.
Bake for 15 to 20 minutes. Cool completely before eating or freezing.
