Diets These are sooo good and a nice change from the starchy, heavy sides.
1 (24-ounce) bag broccoli florets, frozen
2 eggs, beaten
1 and 1/2 cups Gefen Potato Starch
1 cup ground pecans
2 teaspoons Pereg Paprika
1 teaspoon salt
1/2 teaspoon garlic powder
pepper, to taste
1 cube Gefen Frozen Garlic or 1/8 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup Gefen Mayonnaise
1 tablespoon lemon juice
1/8 teaspoon black pepper
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Place frozen broccoli in a large resealable bag. Add beaten eggs and shake to fully coat. Combine potato starch, pecans and spices in another bag. Transfer broccoli to the second bag. Shake well to coat. Place broccoli pieces on prepared baking sheet and spray well with cooking spray.
Bake in preheated oven for 25 minutes.

So good and so easy! I was amazed at how crunchy they are. I make these during the year using flavored bread crumbs to replace the potato starch and nuts. I like to use mini florettes. I think they have more surface area, so I often need 3 eggs.
Delicious and very easy to make
Can you make this with fresh broccoli? Cook any different?
Yes, you should be able to. You just want to broccoli to be crispy so it may need a little more time but it may also be fine.
do these freeze well?
If anyone has the answer to this, please post! Thanks!!!
