Great looking pesach dessert!
Dough
2 1/4 cups almond flour
1/3 cup potato starch
1/4 tsp salt
1/8 tsp baking soda
2 Tbsp margarine (softened)
1 Tbsp honey
1 egg
1 1/2 tsp vanilla sugar
1/2 cup confectionery sugar
Filling:
oil for smearing
2 Tbsp cocoa
1/4 cup confectionery sugar
2 Tbsp sugar
2 Tbsp light brown sugar
Topping:
confectionery sugar
chocolate
drop of oil
– Preheat oven to 350⁰.
– In a small bowl combine almond flour, potato starch, salt and baking soda and set asside.
– Combine margarine, honey, egg, vanilla sugar and confectionery sugar, mix well.
– Slowly pour dry ingredients into wet ingredients and mix until a sticky dough forms.
– Place dough in a bag and refrigerate for at least 15 minutes.
– Combine dry filling ingredients in a bowl.
– Roll out dough between 2 pieces of parchment paper sprinkled with potato starch into a rectangle (about 9″x13″).
– Smear dough with oil and generously sprinkle filling over dough.
– Roll up jellyroll style, using parchment paper to help, then flatten log a bit.
– Slice into about 12 pieces and place on lined baking sheet.
– Bake on 350⁰ for 12 min
let cool fully before handling
-Melt chocolate add a bit of oil to get a good consistency to drizzle.
– Dust with confectionery sugar and drizzle with melted chocolate.
