Alfajores are a traditional South American confection. Two melt-in-your-mouth cookies sandwich a creamy, sweet dulche de leche filling. Deby’s version is all the more decadent by being dipped in chocolate and topped with candied nuts! Watch more on Sunny Side Up!
Yields 24 alfajores
200 grams (about 1 and 2/3 cups) flour
50 grams (about 1/2 cup minus 4 teaspoons) Gefen Cocoa Powder
125 grams (1/2 cup plus about 2 and 1/2 teaspoons) butter, cut into 1/2-inch cubes
150 grams (about 1 and 1/4 cups) ground walnuts
1 egg
100 grams (1/2 cup) sugar
1 teaspoon Gefen Vanilla Extract
Dulce de leche filling
1 bag white chocolate chips, melted
Mix together the flour, cocoa powder, butter, and nuts. Then add the egg with the sugar and vanilla extract, mix it together until it forms a dough. Chill it in the fridge for at least one hour.
Preheat oven to 300 degrees Fahrenheit.
Roll out the dough and cut eight-centimeter circles (about three and a quarter inches). Bake for 20 minutes.
Let the cookies cool completely. Spread half the cookies with Dulce de leche and top with the other half to form sandwiches.
I put the cookies in the freezer for around 30 minutes while I melt the white chocolate. Using an offset spatula and a small fork, dip the Alfajores in chocolate. Top with almond and hazelnut brittle.
