Chocolate Walnut Alfajores

Ingredients

Walnut Alfajores

  • 200 grams (about 1 and 2/3 cups) flour

  • 50 grams (about 1/2 cup minus 4 teaspoons) Gefen Cocoa Powder

  • 125 grams (1/2 cup plus about 2 and 1/2 teaspoons) butter, cut into 1/2-inch cubes

  • 150 grams (about 1 and 1/4 cups) ground walnuts

  • 1 egg

  • 100 grams (1/2 cup) sugar

  • 1 teaspoon Gefen Vanilla Extract

  • Dulce de leche filling

  • 1 bag white chocolate chips, melted

Bake the Cookies

Mix together the flour, cocoa powder, butter, and nuts. Then add the egg with the sugar and vanilla extract, mix it together until it forms a dough. Chill it in the fridge for at least one hour.

Preheat oven to 300 degrees Fahrenheit.

Roll out the dough and cut eight-centimeter circles (about three and a quarter inches). Bake for 20 minutes.

Assemble

Let the cookies cool completely. Spread half the cookies with Dulce de leche and top with the other half to form sandwiches.

2.

I put the cookies in the freezer for around 30 minutes while I melt the white chocolate. Using an offset spatula and a small fork, dip the Alfajores in chocolate. Top with almond and hazelnut brittle.

Hi- most kosher supermarkets sell it, especially during this time of year.

Hi- you can find kosher dulce de leche at almost any kosher supermarket or you can it by scratch
