Serve up those green beans in a whole new way! Mix sour cream instead of mayo with these green beans for an ultra smooth and creamy taste. Chill the salad a few hours before it’s needed for a very refreshing side dish. Here are more ways to cook with green beans: Roasted Asparagus and String Bean Bundles, Spanish Style Vegetable Soup.
1/2 cup sour cream
2 tablespoons oil
2 tablespoons vinegar (use distilled or gluten-free vinegar if needed)
1/2 teaspoon paprika
1/8 teaspoon pepper
1/4 teaspoon oregano
1 (16 oz.) can cut green beans, drained
1 tomato, cubed
1 small onion, chopped
Combine first six ingredients, mix thoroughly.
Add beans, tomato and onion. Mix well.
Chill three to four hours.
