These cheese latkes are fluffy, tasty, and filling, since they are made with farmer cheese. I’ve gotten countless requests for the recipe! Double the recipe as everyone will take more and more! This recipe is definitely a keeper!!

1 pound farmer cheese
3 tablespoons sour cream or Greek yogurt, vanilla flavor is a good option
3/4 cup flour
3 eggs
1/4 – 1/3 cup sugar, to taste
2 tablespoons vanilla sugar (omit if using vanilla-flavored yogurt)
bit of cinnamon (optional)
Combine all ingredients until smooth. Can use a hand blender.
Fry tablespoonful amounts in a pan of hot oil. When golden, flip.
