It’s hard to find things to serve in the Nine Days once you’re done with pizzas and pastas. This recipe will save you when your kids want something different for supper.   Yield: 2 paninis

Ingredients

Falafel Paninis

  • 1 cup shredded cheese

  • 1 red onion, sliced

Directions

1.

Bake falafel balls according to package directions.

2.

Slice open the baguettes and smear garlic mayo on both sides. Lay red onion slices on top. Add on the falafel balls and cheese.

3.

Place baguettes in a panini maker and cook until done.

Tips:

If you don’t have a panini maker, you can use a Betty Crocker or toaster instead.
