Gluten-Free Chocolate Crinkle Cookies

Prepare the Dough

Mix oil, cocoa, sugar and eggs. Add vanilla, potato starch, baking powder. Must, Must chill overnight in fridge.
Bake the Cookies

Next day, shape into balls. I use cookie scoop dipped into confectionery sugar-(use sugar if you want) between each ball. Otherwise very difficult to handle.

Roll each ball in confectionery sugar. Place on cookie sheet with Gefen Easy Baking Parchment Paper. Place far apart because cookies spread a lot. Bake for 10-15 minutes. Let cool on cookie sheet.

Freezes well.
