Ingredients

Healthy Apple Strudel Cigars

  • 3 to 4 big gala apples, peeled and grated

  • 2 tablespoons Heaven & Earth Date Sugar, plus additional for sprinkling

  • 1 tablespoon cinnamon

  • 1 tablespoon cornstarch

  • 1/2 pack phyllo dough, defrosted according to package directions

  • Glicks Cooking Spray or other oil spray

  • extra cinnamon to sprinkle on top

Directions

Prepare the Healthy Apple Strudel Cigars

1.

Preheat oven to 375 degrees Fahrenheit.

2.

Place the grated apples in a pan. Add the date sugar, cinnamon, and cornstarch. Cook on medium heat until all liquids are evaporated. Let cool for 10 minutes or so.

3.

Remove two phyllo sheets at a time and place a full tablespoon of the apple filling on the top center of the dough. Roll the dough once, and then fold the edges, just like an eggroll, and start rolling.

4.

At the middle point, spray some oil, such as avocado or coconut, and continue rolling the cigar until done.

5.

Repeat with remaining phyllo dough until the apple mixture is finished. Place all the rolls on a baking sheet lined with Gefen Parchment Paper.

6.

Spray or brush all the rolls with oil and sprinkle some Heaven and Earth Date Sugar on top. Do the same with the cinnamon.

7.

Place in the oven and bake for about 30 minutes or until golden brown.

8.

Remove from the oven and serve immediately.

These look yummy but I am curious as to how long they stay crispy? I imagine they are very crunchy when they come out of the oven but how do they taste a day later? Do they get soft if served at room temperature? Could they be frozen or stored in the fridge & then reheated to restore their crunch??

These are definitely best served the day they are baked. However, you can easily crisp them back up on a hot plate on shabbos or Yom Tov. I usually like to freeze them raw and bake them before serving. However, you can bake them once cooked but I find they don’t always get as crispy.

This looks like a very good and relatively easy recipe to try, but I find the instructions very vague and confusing. Needs more details, i.e. what size to cut the dough for each cigar? How DO you roll an eggroll?- not all of us have done this before- had to research! Confusing as to whether to cook the apples in the oven or over the stove. Recipe needs to be rewritten more detailed for those of us who aren’t strudel mavens!

I made these for a cold night in the sukkah and they were absolutely yum! I sprinkled both top and bottom with cinnamon and sugar. Next time I would use just one phyllo sheet it should be enough cuz you need to fold and roll a few times so you automatically get multiple layers.
