Ingredients

Special Equipment

  • wooden skewers, soaked in water

Honey Mustard Chicken and Apple Skewers

  • 2 large chicken breasts, cubed

  • 2 apples, cubed

  • 1/2 red onion, large chop

  • 1/4 cup Gefen Honey

  • 1/4 cup whole grain mustard

  • 1 tablespoon Gefen Olive Oil

  • 1 tablespoon fresh herbs (parsley and/or thyme)

  • salt, to taste

  • pepper, to taste

Directions

Prepare the Honey Mustard Chicken and Apple Skewers

1.

Preheat the oven to 375 degrees Fahrenheit.

2.

In a large zip-top bag, place the cubed chicken, apples and onions. Set aside.

3.

In a small bowl, whisk together the rest of the ingredients.

4.

Pour the honey mustard sauce into the bag and mix well until all the chicken, apples, and onions are coated in the sauce.

5.

On wooden skewers, that have been soaking in water, place the cubes on in a pattern starting with onion, apple, chicken. Repeat until all the ingredients have been used up.

6.

Bake for 30 minutes.

7.

To serve, place on white platter, garnish with thyme leaves.

Notes:

This recipe easily doubles and triples for more skewers.
After step 3, you can place the bag into the fridge and allow the chicken to marinate if you want to prepare ahead of time. Alternatively, you can skewer and then place in fridge until ready to cook.
You can always make extra sauce and reserve some to drizzle over the chicken skewers once they are done.

Amazing! It was pretty easy to make and it was fun to eat it off the skewers and kind of cool to have onions and apples and chicken all together. It was also just something different than chicken on the bone.
