I’m always on the lookout for something new and not too time consuming. While shmoozing with my friend Raizy one evening, my antenna went up when she raved about the delicious, mild fish she had served for dinner. She graciously offered to share the recipe with me. We tweaked and added, and the result was nothing short of spectacular.
6 ocean perch or halibut fillets
onion powder, to taste
1/3 cup Gefen Mayonnaise (or sugar free, or homemade)
1 and 1/2 tablespoons Heaven & Earth Lime Juice
1 Dorot Gardens Frozen Dill cube
1 tablespoon grated Parmesan cheese (optional)
garlic powder, to taste
seasoned salt, to taste
paprika, to taste
Heat oven to broil. Wash fish fillets and pat dry. Lay in a 9×13-inch baking pan. Season lightly with onion powder, garlic powder, seasoned salt, and paprika.
Combine remaining ingredients for dressing and set aside.
Broil fish for three to four minutes until slightly charred. Turn fish over. Smear dressing over fish and broil an additional three to four minutes, until bubbling and slightly charred.
