1 pound carrots, scraped and cut diagonally into 1/4-inch slices
1/2 cup water
1 tablespoon sugar
1 and 1/2 tablespoons lime juice (preferably fresh)
2 teaspoons margarine or Gefen Olive Oil
1/4 teaspoon salt
Cook carrots in a pot in a small amount of boiling water for four minutes or until crisp-tender. Drain and return carrots to pot.
Add water and sugar. Bring to a boil. Reduce heat. Simmer uncovered, for nine minutes or until liquid evaporates and carrots are tender.
Stir in lime juice, margarine or oil, and salt.
