Lite and Easy Chinese Chicken

I cannot make the claim that Chinese chicken is a new dish. But I can state that no one makes it like this! I took an impromptu poll of some of my friends and neighbors, asking them how they make their Chinese chicken. All their recipes sounded absolutely delicious, but they were all fried! My version is low-fat and low-cal. It uses the natural flavors from the seasoning to bring out the richness of the chicken and vegetables.

Ingredients

  • 1 pound chicken cutlets, cut into cubes

  • 2 tablespoons toasted sesame oil

  • 5 tablespoons Glicks Soy Sauce, divided

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, crushed, or 2 cubes Gefen Frozen Garlic

  • 1 teaspoon minced ginger (or 1 cube Gefen Frozen Ginger)

  • 1 (16-ounce) bag frozen stir-fry vegetable mix, thawed

  • 1/2 teaspoon salt

  • pinch of black pepper

Directions

Prepare the Chicken

In a medium bowl, combine chicken, sesame oil, and two tablespoons soy sauce. Let marinate for 10 minutes to absorb the flavors.

Heat oil in a sauté pan over medium heat. Add onion and sauté until soft. Add garlic and ginger and sauté for an additional two minutes. Add chicken and cook for 15 minutes, stirring occasionally.

Add stir-fry vegetable mix, remaining soy sauce, salt, and pepper. Lower heat and continue to cook for an additional 15 to 20 minutes, stirring occasionally.

Serve over bulgur wheat, wild rice, long grain rice, or your family’s favorite whole grain.
