A classier brownie for chocolate-mint lovers.
2 squares unsweetened chocolate
1/2 cup margarine
2 eggs
1 cup sugar
1/2 cup chopped nuts
1/2 cup flour
1 and 1/2 cups confectioners’ sugar
3 tablespoons margarine (use soy-free if needed), softened
2 tablespoons Kineret Whipped Topping, unwhipped
1/2 to 3/4 teaspoon mint extract
drop of green food coloring (optional)
Preheat oven to 350 degrees Fahrenheit. Grease nine-inch square pan.
Melt chocolate and margarine in a double boiler until smooth. Cool.
Beat eggs and sugar in a medium-size bowl until thick. Add nuts, flour, and chocolate mixture and stir until smooth.
Pour into prepared pan and bake for 25 minutes. Remove from oven and cool.
Beat together all frosting ingredients until smooth. Add food coloring, if desired.
Spread evenly over brownie layer, cover, and chill until firm, approximately one hour.
