Mocha Muffins

These are light (though not in calories), fluffy, and have an indiscernible coffee taste if you are not a bean lover.


Mocha Muffins

  • 1 and 1/2 teaspoons baking powder

  • 1 and 1/2 tablespoons Gefen Vanilla Sugar

  • 1 tablespoon coffee dissolved in 1 and 1/2 cups hot water for an extremely very mild taste. If you like a stronger coffee flavor, up the amount to 2 or 3 tablespoons



Mix ingredients, pour into muffin cups, and bake at 350 degrees Fahrenheit for 25 minutes or until done.

Here are some ideas: Rum extract; Strawberry extract; Coconut extract; Banana liqueur; Pistachio extract; Caramel extract or liqueur; Raspberry extract or liqueur; Orange, lemon, and/ or grapefruit zest for a citrus cake; Or throw in a packet of flavored Jello into any vanilla cake.
