Mock crab and fried rice are a perfect lunch or light dinner. I love fried rice because it’s a whole meal in one single pan. This dish becomes even more delicious if it sits in the refrigerator for a couple of days! I hope you will give this recipe a try!
1 cup of raw Basmati rice, cooked according to package directions
5 tbsp olive oil
3 cloves of minced garlic
1 tsp minced ginger
1 cup of shelled edamame
2 beaten eggs
8 mock crab sticks, sliced
6 scallions sliced
6 tbsp of soy sauce, divided
2 tbsp honey
1 tbsp sriracha
In a large frying pan add oil, garlic and ginger. Slowly heat it up until very fragrant and starting to brown.
Add cooked rice, edamame, 4 Tbsp of soy sauce and honey. Allow to cook for five minutes stirring occasionally.
Add egg and mix until egg is fully cooked.
Add the mock crab and the rest of the soy sauce, Sriracha and little salt and pepper. Cook for an additional four minutes, stirring occasionally.
Stir in the scallions.
Prior to serving, squeeze on some fresh lime.
