Looking to take your grilled cutlets up a notch? This marinade does require an extra step—taking out a food processor—but it’s worth the effort. It’s super flavorful and results in really moist cutlets.
1 small onion, quartered
2 cloves garlic or 2 cubes Gefen Frozen Garlic
1 teaspoon Glicks Hot Sauce
1 teaspoon thyme
1 teaspoon allspice
2 tablespoons Haddar Dark Brown Sugar
2 tablespoons soy sauce
2 tablespoons lemon juice
1/2 teaspoon black pepper
2 pounds dark chicken cutlets
In a food processor fitted with the S-blade, process onion, garlic, hot sauce, thyme, allspice, brown sugar, soy sauce, lemon juice, and pepper, processing on high speed until well combined and there are no large pieces.
Pour into a ziplock bag. Add dark cutlets and shake to coat. Marinate for at least 30 minutes or overnight.
Heat grill or grill pan on medium-high heat.
Grill chicken for five minutes per side, until cooked through.
