Diets When it comes to Pesach, every year I have a hard time with breakfast. It’s super important to me to start my day off right with something nourishing and filling that will keep me going through the busy day ahead, and these One-Bowl Cheddar Scallion Muffins are a quick grab-and-go, Pesach-friendly treat that fill me up without weighing me down.
These muffins also make a great snack during the day, or serve them alongside your favorite tomato or vegetable soup.
4 eggs
1/2 cup Gefen Olive Oil
3/4 cup milk (any type)
3 cups Gefen Almond Flour, lightly packed
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon Gefen Onion Powder
1 cup shredded cheddar cheese
1/2 cup thinly sliced scallions, from 4 to 5 scallions
Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with paper liners and spray with nonstick cooking spray.
In a large mixing bowl, whisk together eggs, oil, and milk.
Stir in almond flour, baking powder, salt, garlic powder, and onion powder.
Gently fold in cheddar and scallions. Don’t overmix!
Divide batter evenly between 12 muffin cups and bake 25 to 30 minutes, until firm to the touch and golden brown.
