A light and tasty dessert for Passover and gluten-free diets – light chocolate truffles prepared with gluten-free wafers. The kids will go crazy over them!
Yields 50–60 chocolate balls
8 and 3/4 ounces (250 grams) Elite 70% Dark Chocolate
3/4 cup (180 milliliters) milk
3 and 1/2 ounces (100 grams) butter
pinch of salt
10 and 1/2 ounces (300 grams) Elite Passover Chocolate Wafers
3 and 1/2 ounces (100 grams) Elite Passover Chocolate Wafers, ground
Break the chocolate into squares and place in a bowl.
Add milk and butter cubes and melt together in a double boiler or in a microwave until everything is melted and the mixture is smooth. Add salt and stir.
Place the wafers in a sealed bag and, using a rolling pin, crush into crumbs (or grind in a food processor).
Add the crumbs to the chocolate mixture and mix until the mixture is smooth.
Chill the mixture in the refrigerator for about an hour until it becomes firm.
Make small walnut-sized balls from the cold mixture and coat with ground wafers.
