Diets This pancake mix can be used for pancakes or in recipes calling for pancake mix. It is gluten free and my family enjoyed it more than my regular pancakes! .
1 and 3/4 cups Gefen Almond Flour
2 tablespoons tapioca starch
1/4 cup coconut flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 cup pancake mix
1/2 cup milk (I’ve only tried with regular milk but likely dairy free options would work too)
2 eggs
1 teaspoon vanilla
1 teaspoon cinnamon
To make the pancake mix, just mix the ingredients to incorporate them.
Yields 2 and 1/2 cups
Mix pancake mix, milk, eggs, vanilla, and cinnamon.
Heat a lightly oiled frying pan over medium-high heat. Pour batter into the pan, using approximately two tablespoons for each pancake. Brown on both sides, adding whatever toppings you’d like prior to flipping and serve hot.
