Yields: 30 granola bars

Ingredients

Main ingredients

  • 8 cups rolled oats

  • 1 cup whole wheat flour

  • 1 cup ground flax

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 3 teaspoons vanilla extract

  • 1/2 cup oil

  • 2/3 cup soy milk

  • 2/3 cup brown sugar

  • 1/2 cup honey

  • 2/3 cup natural creamy peanut butter

  • 1/2 cup sugar-free raspberry jelly

  • 1/2 cup sugar-free strawberry jelly

Directions

Prepare the Granola Bars

Preheat oven to 350 degrees Fahrenheit. Prepare a disposable cookie sheet by lining it and spraying it with non-stick baking spray.

In a mixer, combine the rolled oats, whole wheat flour, ground flax, baking powder, and baking soda. Mix.

Add the vanilla extract, oil, and soy milk. Mix again.

Add the brown sugar, honey, peanut butter, raspberry jelly, and strawberry jelly. Mix very well. You will now have a batter that is moist and possibly a bit crumbly.

5.

Press the batter into the prepared cookie sheet.

6.

Bake for 25 minutes. Remove from oven. Cut after only cooled for five minutes. Do not remove the pieces until fully cooled. This will prevent them from breaking.
