Pesach Cucumber Slaw

Main ingredients

  • 1 medium daikon radish, peeled

  • 2 small carrots, peeled

  • 6 cucumbers, peeled and diced

  • 1 red onion, peeled and diced

  • 6 tablespoons homemade mayonnaise (try Estee Kafra’s mayo recipe)

Directions

Prepare the Cucumber Slaw

1.

Using your food processor, shred carrots and daikon.

2.

In a large bowl, combine carrots, daikon, cucumbers, and red onion.

3.

Prepare dressing. Combine mayonnaise, salt, lemon juice, and sugar and mix well.

4.

Pour dressing over cucumber mixture and mix well.

5.

Refrigerate until ready to serve.
