I first tasted these chicken strips at a friend’s house. I was guilt-ridden—potato chips, deep-fried chicken, the works. To my delight, when I asked my friend how she made them, I discovered that yes, they’re covered in chips, but they’re baked, not fried.

Preheat oven to 350 degrees Fahrenheit.
While chicken is still partially frozen, cut into one-inch strips. Prepare three bowls. Place potato starch in the first bowl. In the second, beat eggs with salt, paprika, garlic, and ketchup. Crush potato chips and place in third bowl.
Dip chicken in potato starch, then in egg mixture, and finally in potato chips. Place on a baking tray and bake for 12 minutes.
Tips:
To serve these as an appetizer, place your chili sauce or dip in the bottom of a tasting glass. Arrange two chicken strips in the glass.
