Quinoa Wraps (Gluten Free)

These delicious gluten free wraps are high in fiber, protein, and are an excellent source of omega-3 fatty acids.

Ingredients

Quinoa Wraps

  • 1 cup Pereg Quinoa

  • 2 tablespoons chia seeds

  • 1 and 1/2 cups water, room temperature

  • Optional: 1 tablespoon Gefen Maple Syrup OR 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder

Directions

1.

Rinse the quinoa very well using a fine mesh sieve and place in a bowl on the counter. Cover completely with water. Let sit to soak at least three hours.

Drain and rinse the quinoa  again and add to a blender with the rest of the ingredients. If you’d like sweet wraps, add the maple syrup. If you prefer savory wraps, add garlic powder, and onion powder.

Preheat your frying pan. Lightly spray with avocado oil spray and pour half a cup of batter into the pan.

Spread the batter with the back of the measuring cup or a spoon. It’s normal if the first wrap doesn’t come out well (just like pancakes!)

Tips:

Sweet toppings: almond butter with fruit or yogurt, fruit and a drizzle of silan.

Savory toppings: Hand salad – add your favorite salad ingredients and drizzle with salad dressing.

Roasted veg wrap – I love roasted sweet potatoes, cauliflower, purple onions, peppers and mushrooms but you can use your own favorite vegetables.

Tuna or egg salad topped with shredded lettuce, pickles and purple onion.
