Healthy Apple Pie (Paleo, Gluten-Free, Grain-Free, Dairy-Free)

A wonderfully delicious dessert that has no flour, sugar, eggs or dairy. Requires absolutely no baking. It’s probably the best dessert ever. Not to mention that you’ll have to hide some extra pies around the house because after someone tastes it, there won’t be any left!!!

Ingredients

Crumble Crust/Topping

  • 2 cups raw walnuts or pecans (or a mixture)

  • 1/2 cup unsweetened dried coconut

  • 1/2 teaspoon Gefen Cinnamon

  • 1/4 teaspoon table salt

  • 1 cup raisins

  • 3–4 Medjool dates

Apple Pie Filling

  • 4 apples, peeled, 2 sliced thinly and 2 quartered

  • 3 tablespoons fresh lemon juice, divided

  • 3/4 cup raisins, soaked in warm water for 20 minutes

  • 3 pitted Medjool dates, soaked in warm water for 20 minutes

  • 1/2 teaspoon Gefen Cinnamon

Directions

For the Crumble

1.

Process the first five ingredients in a food processor with an S blade until coarsely ground.

2.

Add raisins and dates until mixture begins to stick together. This will keep for at least one month refrigerated and is a nice, quick dessert to go in and grab when your sweet tooth hits. It also makes a great crust for puddings and pies.

For the Filling

1.

Coat sliced apples with two tablespoons lemon juice to retain color. Set aside.

2.

Place remaining apples, lemon juice, dates, raisins, and cinnamon in food processor. Process with S-blade until smooth.

3.

Remove from processor and combine this mixture with the sliced apples

Assemble

1.

Firmly press one cup crumble topping into an eight- or nine-inch pie pan.

2.

Spread pie filling over crust, then sprinkle on up to one cup of remaining crumble topping over the top.
