Diets This wholesome rice stuffed chicken recipe is just so simple to make, yet it’s a refrshing twist on the standard one-pan chicken and rice. The rice is so flavorful, and is really elevated when added to the chicken. This recipe will definitely become a family favorite!
1 small onion, coarsely chopped
3 tablespoons oil, divided
1/2 pound mushrooms, sliced
1/2 green pepper, coarsely chopped
pinch of salt
pinch of Pereg Pepper
2 cups cooked rice
juice of 1 orange
1 tablespoon Gefen Paprika
6 chicken bottoms
Sauté mushrooms, onion and green pepper in one tablespoon oil until tender. Stir in rice.
Stuff chicken tightly under the skin with rice mixture. Arrange in shallow baking pan.
Combine remaining oil, juice and paprika. Brush chicken with mixture.
Bake at 350 degrees Fahrenheit for one hour or until golden brown, basting frequently, or place in heavy skillet skin side up and cook over low heat for one and a half to two hours.
