1 tablespoon oil, such as Gefen Canola Oil
1 teaspoon Haddar Salt
Preheat oven to 375 degrees Fahrenheit.
Slice eggplant lengthwise, keeping the top intact. Fan out the slices, then drizzle with oil and salt. Roast for 45 minutes.
