I loved the results of my sheet pan gnocchi so much, I wanted a cheesy, pizza-inspired version.

Main ingredients

  • 1 (16-ounce) package Bartenura Gnocchi

  • 2 tomatoes on the vine, sliced

  • 1/4 cup olive oil

  • 6 cloves garlic, crushed

  • 1 teaspoon salt

Directions

Prepare the Gnocchi

1.

Preheat oven to 400 degrees Fahrenheit.

Spread gnocchi on a greased baking sheet. Add tomato slices and toss everything with olive oil and garlic. Spread gnocchi and tomatoes evenly, so tomatoes and gnocchi are in a single layer and not overlapping.

3.

Dot some areas which don’t have tomatoes with sauce and pesto. Grate fresh mozzarella over the whole dish.

4.

Bake for 30 minutes, until cheese begins to turn golden and bubbly. Enjoy immediately.
