I love pesto, but unfortunately, they don’t sell a kosher version in the grocery store in my smaller out of town community. Thankfully, this recipe is so easy to make. I made it in a blender, which leads to a very creamy texture. For a more classic, grainy texture, use a food processor to chop and mix all the ingredients.
3 packed cups spinach
6 frozen cubes (or fresh tsp) basil
8 cloves garlic
1.5 tsp kosher salt
1/4 cup lemon juice
1/2 cup olive oil
1/2 cup cashews
1/2 tsp pepper
Using a blender or food processor blend all ingredients together.
Serve over chicken, salmon, pasta, or just as a dip on Shabbos!
