Ingredients

Red Layer

  • 4 cups cubed watermelon

White Layer

  • 1 (5-ounce) container vanilla yogurt

Green Layer

  • 1/4 cup water

  • 1/2 cup ice

Directions

1.

Prepare the red layer: In a blender, purée the watermelon until smooth and pour into a Popsicle mold, filling each cavity 2/3 of the way. Insert Popsicle sticks and freeze for at least two hours.

2.

Prepare the white layer: Add about 1/2 inch of yogurt to each Popsicle, smoothing it into an even layer with the back of a small spoon. Try to wipe off any yogurt above the 1/2 inch to create a distinct layer (see tip).

3.

To prepare the green layer: In a blender, purée the grapes, pineapple, spinach, mint, water, and ice until smooth. Pour into the remaining space in the cavities of the Popsicle mold and freeze for another one to two hours, until firm.

Tips:

Piping the yogurt into the Popsicle molds makes it easier to create a distinct white layer. Add the yogurt to a pastry bag or a disposable plastic bag with one corner snipped off.
