With watermelon in season now, it’s the perfect time to make these refreshing treats. No added sweetener needed; this yummy summer treat has only the good stuff.
Yield: 10
4 cups cubed watermelon
1 (5-ounce) container vanilla yogurt
1/2 cup green grapes, seedless
1/2 cup Beleaves Frozen Pineapple chunks
1/2 cup spinach leaves, such as Beleaves Frozen Spinach
10 mint leaves
1/4 cup water
1/2 cup ice
Prepare the red layer: In a blender, purée the watermelon until smooth and pour into a Popsicle mold, filling each cavity 2/3 of the way. Insert Popsicle sticks and freeze for at least two hours.
Prepare the white layer: Add about 1/2 inch of yogurt to each Popsicle, smoothing it into an even layer with the back of a small spoon. Try to wipe off any yogurt above the 1/2 inch to create a distinct layer (see tip).
To prepare the green layer: In a blender, purée the grapes, pineapple, spinach, mint, water, and ice until smooth. Pour into the remaining space in the cavities of the Popsicle mold and freeze for another one to two hours, until firm.
