Zucchini Corn Soup

I’ve shared this many times with friends and family and all agree it’s one of the best soups they ever tasted.

 

I wanted to make my favorite veggie soup but didn’t have much in the house.


I had onions and zucchini and then I thought to add corn. The result was the best soup ever!!

Start Cooking

Prepare the Soup

  1. Cut onions. Doesn’t have to be small pieces as you’ll purée it at the end either way.

  2. Sauté onions in a little oil.

  3. When clear add salt and pepper

  4. Add chunks of zucchini.

  5. 2 cans of sweet corn with liquid.

  6. Water to cover.

  7. Cook for a while then jzujz it.
