Gabe is fixing that with these incredible fritters. Mixing sweet potato,
potato, and onion with Pâte à choux dough is just the kind of genius
idea to take your latkes to the next level. It's never too early to
start experimenting!
Latke Fritters
3/4 cup water
1/2 stick margarine
1/4 teaspoon salt
1/2 teaspoon sugar
3/4 cup all-purpose flour
4 eggs
1 Russet potato
1 sweet potato
1 tablespoon onion flakes
1 tablespoon tarragon, chopped
1 tablespoon chives, chopped
1 teaspoon salt
1 teaspoon pepper

Love the clear and concise explanations. I usually find latkes underwhelming but this recipe is outstanding! It elevates latke to the point where I enjoy eating it and even crave it. The recipe is a keeper!
