2 eggplants, partially peeled
¾ cup olive oil
17 whole garlic cloves, divided
2 1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 teaspoon smoked paprika
1/2 teaspoon cumin
1 jar tehina paste
2 lemons
1/2 teaspoon zaatar
pinch cayenne pepper
1/2 teaspoon hawaij (optional)
8-10 oz ice water
Fresh parsley
1 teaspoon vinegar
2 tablespoons sugar
Pomegranate seeds
