Can i use water instead of seltzer?
The bubbles help. Better to use something carbonated. Even a flavored seltzer or beer is better than plain water. But if you must, ice cold water will work best.

Please keep in mind that if your using a whisk in a nonstick pot/pan its very unhealthy and ill explain.
Nonstick pans are coated with unhealthy chemicals, when the pan that’s not stainless steal gets scratched the chemicals in the pan is made with gets released – that results in food that can potentially has chemicals in it.
Using a metal whisk can scratch the pot/pan.

can we use potatoe starch instead? is there a pesach edition? look yum!
I haven’t tried this recipe but I would think potato starch is better. I make a tempura batter schnitzel from kosher.com which calls for corn starch and find it to be better when using potato starch! Let us know if you try it….
