Leftover Pot Pie
2 tablespoons oil
1 large onion, diced
1 red pepper, diced
1 rib celery, diced
3 cloves garlic, chopped or 3 cubes Gefen Frozen Garlic
salt, to taste
pepper, to taste
1 tablespoon Lipton Onion Soup Mix
1 teaspoon paprika
2 and 1/2 cups cooked protein of choice, diced (leftovers from a previous meal are perfect!)
6 Ta’amti Potato Bourekas, defrosted
1 egg

looks great! but you can just use regular store bought puff pastry and save the extra step of removing the potato
You sure could! However, the potato is a part of this recipe. If you’d prefer to skip the potato, you can use a store-bought plain puff pastry dough, like Gefen’s. But if want to include the potato, the borekas are really a shortcut.

Can you make in advance or needs to be on yom tov? my oven is not set for 425 on yom tov?
Esty says this can definitely be made in advance, just reheat uncovered.
