Slice the eggplant open on one side to create a boat. Stuff the garlic cloves inside the eggplant. Place eggplant seam-side down on a baking pan. Roast on 375 degrees Fahrenheit for an hour or until the eggplant is very soft. Allow eggplant to cool.
Scoop out flesh along with garlic (discard skin). Place in a food processor fitted with an S blade. Add seasoning and dressing and pulse to cream.
