A refreshing change from the usual cucumber salad. See More Health Salad Cucumber Salad
5–6 Kirby cucumbers
1/2 purple onion
4 radishes
4 tablespoons Gefen Mayonnaise
1/4 cup (scant) distilled vinegar
3 tablespoons sugar
3 tablespoons fresh dill, chopped or 1 tablespoon dried dill or 9 cubes Dorot Gardens Frozen Dill
1 teaspoon salt
Slice all vegetables into thin rings. (Do not peel cucumbers.)
Combine dressing ingredients and mix with vegetables. Stays fresh for two days.
