Apple and Fennel Seared Halibut

Mike might take most of his days off on Long Island, but today he's hitting the West Coast, and getting a look at Tierra Sur with Chef Gabe Garcia of Under the Hood. Watch as they take a tour of the wine cellar with head winemaker Joe Hurliman, try some brand new items, and build a delicious halibut recipe on the spot from ingredients they have at hand!

Fennel and Apple Seared Halibut

Main ingredients
 2 pounds fillet of halibut
 1/2 cup finely shaved fennel
 1 Honey Crisp apple, diced
 2 sprigs parsley
 1/3 cup white wine such as Elvi InVita
 1–2 tablespoons Arak or other anise-flavored liquor
 1 teaspoon Gefen Extra-Virgin Olive Oil
 1 tablespoon canola oil
 1/2 cup fish stock or water
 pinch of cayenne pepper
