Fennel and Apple Seared Halibut
Main ingredients
2 pounds fillet of halibut
1/2 cup finely shaved fennel
1 Honey Crisp apple, diced
2 sprigs parsley
1/3 cup white wine such as Elvi InVita
1–2 tablespoons Arak or other anise-flavored liquor
flour
salt
pepper
1 teaspoon Gefen Extra-Virgin Olive Oil
1 tablespoon canola oil
1/2 cup fish stock or water
pinch of cayenne pepper
