Mike's Brisket
Dry Rub
1/4 cup brown sugar
1/4 teaspoon dried thyme
1/2 teaspoon allspice (whole)
1 teaspoon Valencia Orange peel
1/2 teaspoon smoked paprika
Pinch of black pepper
Haddar Kosher Salt
1 fresh bay leaf
