In her new cookbook, Samantha Tehrani shares delicious, wholesome meals that don’t require hours in the kitchen.

 

Inspired by her book, we’re sharing 14 quick prep weeknight dinner recipes that require only 15 minutes or less of active prep!

  1. Slow Cooker Korean-Inspired Short Rib Tacos by Samantha Tehrani
    Korean tacos are very popular in Los Angeles and throughout the country. I love this recipe for a delicious weeknight dinner after a long day in the office. I set my slow cooker to cook the short ribs while I’m at work, and the toppings come together in less than 10 minutes after I walk through the door.

  2. Sticky Pomegranate Meatballs by Samantha Tehrani
    The sauce for these meatballs includes a surprise ingredient – pomegranate juice. I love using recipes like this to feed my family a variety of fruits and vegetables. Stir-fries come together in the pan quickly, so the key is to prep all the ingredients in advance. That way, you won’t be stressed about making the sauce or chopping the vegetables when it’s time to add them to the pan.

  3. Oven-Baked Pesto Schnitzel by Samantha Tehrani
    Schnitzel is a family favorite. However, I don’t love that it is fried, and I don’t love that I have to stand over the stove cooking it in batches. This oven-baked schnitzel recipe solves both of those problems, and the addition of pesto really takes the flavor to another level. You can serve it for Shabbat lunch, but please do yourself a favor and taste a piece as it comes out of the oven. It’s crispy perfection.

    This recipe is perfect for when you want to treat yourself to a hot breakfast but only have brainpower for 10 minutes of cooking. While I was living in Dallas, a friend from Mexico made this for me. I took one bite, insisted she tell me the recipe, and have been making it ever since. When my husband and I were new parents, this was our go-to breakfast, since we always had the ingredients in the house.

    I’m lucky enough to have a high-quality fish counter just down the street from me. Although most of the time I end up walking home with salmon, I like to switch it up with other fish varieties like cod, too. This recipe comes together in a flash, and the garlicky butter sauce is just divine. Every time I make this recipe, I ask myself why I don’t make cod more often.

    Two words to sum up this classic pasta recipe? Quick and easy. Need I say more?

  7. Hoisin Chicken with Broccoli Rice by Victoria Dwek
    This one-pot meal takes minimal time and makes minimal mess. Hoisin sauce is so flavorful on its own…you won’t need to take out half the pantry to make a sauce.
